Dried shrimp are shrimp that have been sun dried and shrunk to a thumbnail size. They are used in many Asian cuisines as a flavouring. These have lots of concentrated shrimp flavour, They have only a short shelf life and need to be refrigerated. They need to be soaked in hot water for 15 minutes before using.
